Savoury French Toast

Serves 2
Ingredients
3 eggs
1 tsp dried thyme
1/2 tsp paprika
2 tbsp grated parmesan
Salt and pepper
4 slices of spelt sourdough
2 tbsp olive oil
To garnish:
6 cherry tomatoes
Fresh parsley, finely diced
Method
Whisk eggs, dried herbs and spices, parmesan, salt and pepper in a dish until all ingredients are combined.
Dip each slice of bread into the egg mixture, coating both sides evenly.
Heat 1 tbsp olive oil in a pan over medium heat.
Place the coated bread slices pan and cook until gold and crispy on both sides.
While the toast is cooking, saute cherry tomatoes in a separate pan with the remaining olive oil.
Serve and garnish with herbs and sauteed cherry tomatoes.
