Berry & Vanilla French Toast

Ingredients
2 eggs
1/2 tsp vanilla essence
1/2 tsp cinnamon
4 slices of spelt sourdough
1 tbsp olive oil
Toppings:
4 tbsp Yopro vanilla yoghurt
1/4 cup blueberries
1/4 cup raspberries
Optional: maple syrup
Method
Whisk eggs, vanilla and cinnamon in a dish until ingredients are combined.
Dip the bread in the egg mixture and coat evenly on both sides.
Heat oil in a pan over medium heat. Cook the toast until crispy and golden on both sides.
To serve, top with a dollop of vanilla yogurt and berries.
